4 large zucchini
2 Tablespoons of parmesan cheese
4 tomatoes diced
1/2 tsp of oregano
1/2 cup of bread crumbs (panko or other)
1/2 tsp of salt
3 Tablespoons of low-fat cream cheese
1/4 tsp of black pepper
1 Preheat oven to 400 degrees F and spray an 8×8 baking dish with nonstick cooking spray.
2 Cut zucchini in half lengthwise and hollow out about half of the zucchini halves and chop up the other full half. Placed the hollowed out halves in the baking dish.
3 Mix all the other ingredients in a bowl with the chopped zucchini. Fill the hollowed zucchini evenly with the mixture.
4 Bake for 40 minutes.
