Turkey (or Beef) Chili Recipe

Ingredients List

1 pound ground turkey
–  salt and pepper
2 tsp chili powder
1 tsp paprika
1 cup peeled grated carrots
1 tsp ground cumin
2/3 cup chopped onions
1/8 tsp ground cayenne
2/3 cup chopped celery
1 can plum tomatoes 14.5 oz
2 clove minced garlic
1/2 cup chicken broth
1 bay leaf

Optional: Add 1 can of black beans, 1 can of kidney beans, 1 can of navy beans

Directions

 
1 Heat a 3 qt nonstick pan over high heat and spray with cooking spray.

2 Add the turkey (or ground beef) and season to taste with salt/pepper. Cook until browned and remove to a bowl.

3 Reduce heat to low and add carrots, onions, celery, and garlic. Cook for 5 minutes until vegetables begin to soften. Add the chili powder, paprika, cumin, and cayenne. Stir for about a minute increasing the heat to medium.

4 Add the can of tomatoes, chicken broth, and bay leaf and bring to a boil over high heat. Reduce heat to medium-low and simmer for 15 minutes covered.

5 Add the browned turkey (or beef) and simmer for another 5 minutes. Remove bay leaf before serving.
