Tomato Cucumber Summer Salad with Grilled Corn

Ingredients List

1 (15.25-ounce) can shoepeg corn, well drained or 2 ears
1 jalapeno, diced
1 cup diced, peeled cucumber, seeds removed
2 Tablespoons white balsamic or rice vinegar
1 cup cherry or grape tomatoes (red and yellow), halved
1/3 cup chopped red onion
1 tablespoon extra virgin olive oil
1 tablespoon lime juice
1 teaspoon fresh minced garlic
1/4 cup feta cheese crumbled
3/4 teaspoon salt
1/2 teaspoon pepper
1/4 teaspoon paprika
1/4 cup fresh cilantro, chopped

Directions

1 Combine all the listed ingredients together in a medium bowl. You could serve immediately or refrigerate for a half hour to chill before serving.

2 This is delicious served as a salad or as a wrap. Enjoy!
