1 teaspoon olive oil
1-2 lbs boneless skinless chicken thighs
1 cup chopped carrots 1 large chopped onion
1 chopped bell pepper
4 garlic cloves, minced
2 Tablespoons ginger, minced
2 Tablespoons fish sauce
2 Tablespoons red curry paste
2 Tablespoons soy sauce or coconut aminos
2 cups chicken broth
1 can coconut milk
1 package sliced mushrooms
¼ cup chopped fresh basil
2 Tablespoons fresh lime juice to add just before serving
Splash of Franks hot sauce
1 Sauté chicken in olive oil until browned and place in slow cooker with all the ingredients except the coconut milk, mushrooms, basil. Cook on low for 4-5 hours until chicken is tender.
2 When finished cooking, remove chicken and shred using two forks.
3 Return chicken to slow cooker and add coconut milk, mushrooms, and basil. Give everything a stir and squeeze in some lime juice.
4 If you want more kick, add an optional splash of hot sauce.
