3 pounds of sweet potatoes peeled and cut into 1-inch cubes
2 tablespoons of coconut oil melted
3 tablespoons of brown sugar
3 tablespoons of orange juice
1 ½ teaspoons of salt
½ teaspoon of vanilla extract
½ cup of finely chopped pecans
2 cups of miniature marshmallows
1 Boil sweet potatoes in a large pot covered in water. Lower heat and simmer for 15 minutes or until very tender. Drain; cool slightly.
2 Place potatoes in a large bowl. Add coconut oil, brown sugar, orange juice, salt and vanilla. Mash sweet potato mixture with a potato masher. Fold in 1/4 cup pecans. Place potato mixture into the bottom of an 11 x 7-inch coated baking dish. Top with remaining 1/4 cup pecans and marshmallows.
3 Bake at 375° for 25 minutes until marshmallows are golden.
