Get ready to eat the best stuffed lobster you have ever had in your life. This recipe came from a client, and she taught us as we watched. The crabmeat stuffing is unreal, and a meal itself!

Directions

Prepare the Lobsters
1 Lay lobster down, and run a knife down the middle all the way through the tail. Open the middle to remove the roe and rinse. Preheat oven or BBQ to 375 degrees.

2 Prepare the stuffing by sautéing the onions, garlic, butter, shrimp, lump crab, bread crumbs in a bit of water and olive oil. Add more water or oil as needed to keep the stuffing moist. Take it off the heat when shrimp is cooked to cool down a bit. Add salt and pepper to taste.

3 Place lobsters on a piece of foil that will be used to tent them with, and stuff the cavity of the lobster with the stuffing mixture. Drizzle with melted butter if desired, and close foil loosely vent the steam. Cook for app 20 min.

4 Remove from oven and sprinkle with fresh chervil or parsley for garnish. Serve with melted butter.
