Strawberry Cheesecake

Ingredients List

For Cheesecake
1 1/2 pounds of cream cheese (3 pkgs)
3 eggs
1 tsp of Vanilla
1 cup of Sugar
2 pints of Fresh Strawberries for topping

For Graham Cracker Crust
1 package of Graham crackers crushed (1 3/4 cup)
1/4 cup of Sugar
1/3 cup of softened margarine
1/3 tsp of cinnamon

 

Directions

For Graham Cracker Crust

1 Combine all ingredients for the graham cracker crust.  Spread and press in either a pie plate or preferably a 9 1/2 inch round pan.

2 Bake the graham cracker crust for 8 minutes at 375 degrees and let cool. After it cools you will pour in cheesecake batter as per directions for cheesecake.

For Cheesecake

1 Combine all ingredients in for cheesecake and mix until combined and large lumps disappear.

2 Pour cheesecake mixture into your cooled, cooked graham cracker crust (as per above) and bake at 350 degrees for 1 hour. Note: Strawberry topping below is optional but delicious on cheesecake. Feel free to substitute blueberries.

 

For Strawberry Topping

1 With a fork, mash strawberries until soupy. (For 4th of July, use whole strawberries, blueberries, and bananas to top.

2 Spread a thin layer of strawberry mix on top of cooled cheesecake with a spatula and serve.
