Smoked Salmon Frittata

Ingredients List

10 eggs
3 Tablespoons of fresh chives, diced
3 Tablespoons olive oil
1/2 cup onions, diced
4 ounces smoked salmon, chopped
2 avocados, diced
1 teaspoon fresh lemon juice
1 cup cherry tomatoes, halved
1/4 cup goat cheese crumbled (optional)

– salt & pepper to taste

Directions

1 In a bowl whisk the 10 eggs together with the fresh chives. Slice the cherry tomatoes into halves and set aside.

2 In a large oven safe skillet, heat the olive oil and saute the onions until slightly soft (about 5 minutes); then add the smoked salmon and stir for a minute or two more. Add cherry tomatoes and stir. Add salt and pepper to taste.

3 Toss cubed avocados with fresh lemon juice, and add it to the frying pan. Even out the ingredients in the bottom of the frying pan (add optional goat cheese now), and pour the egg mixture over the top. Cook until the sides begin to firm; then, move the entire skillet to a 350 degree baking oven and cook for about 20 minutes until eggs set.  Cut like a pie and serve.
