Slow Cooker Chicken Thighs Recipe

Ingredients List

8 Chicken Thighs or 2 ½ pounds
1 Tablespoon Dijon Mustard
1 Tablespoon Lemon Zest
1 tsp dried oregano
1 tsp dried thyme
1 tsp salt
2 tsp olive oil
1 can cream of mushroom soup
1/3 cup honey
¼ tsp red pepper flakes
1 inch piece of minced ginger
2 garlic cloves, minced 
1 cup chicken stock
2 Tablespoons flour


1Combine mustard, lemon zest, oregano, thyme, olive oil, and salt to make a rub for the chicken. Rub each thigh with the mixture and add to the slow cooker. 

2 Add cream of mushroom soup, honey, red pepper, ginger, garlic, and chicken stock to the slow cooker. Cook 5-6 hours on low. Add flour at the end of the cooking cycle to thicken the sauce if desired. Serve in a bowl, over rice, or on a roll.
