Sea Bass in Red Wine

Ingredients List

4 sea bass filets
–  salt and black pepper to taste
1 tablespoon of butter
1 tablespoon of olive oil
2 strips of cut lemon peel
1 clove garlic
1 tsp of thyme
1/2 cup port or red wine

 

This is quite wonderful served on a bed of rice and sautéed peppers with a side of Brussel sprouts. 

 

Directions

1 In a large skillet, heat 1 tablespoon of butter and 1 tablespoon of olive oil on medium-high.

2 Season the sea bass fillets with salt and pepper and add fish to pan skin side down

3 Add 1 clove diced garlic, 1 teaspoon thyme, and lemon peel to the pan and cook for 6-7 minutes basting the sea bass with the oil mixture from the pan until the skin is crisped.

4 Transfer the fish skin side up to a baking dish and add 1/2 cup of port or red wine to pan and roast in the oven for 3-4 minutes on 400 degrees until fish is cooked through.
