1-2 pounds of wild Alaskan salmon
1 Tablespoon of olive oil
2 Tablespoons honey
1 Tablespoon of lime juice, freshly squeezed
1/4 cup fresh cilantro, chopped
2 Tablespoons of soy sauce or coconut aminos
2 cloves garlic, minced
salt & pepper
1 Preheat oven to 400 and brush the salmon with olive oil, salt & pepper. Place salmon in a shallow broiling or baking pan (you can place on top of foil as well and curl the ends up).
2 In a separate bowl, combine honey, lime juice, cilantro, scallions, soy sauce (or coconut aminos), and garlic. Whisk all together.
3 Make a few knife cuts into the salmon and stuff with the honey & cilantro mixture. Spread the rest of the mixture all over the salmon.
4 Bake salmon uncovered for 20 minutes. If desired broil it for 5 or 10 minutes more to crisp up the top.
