Ricotta Cookie Cakes

Ingredients List

Whisk together
2¼ cups
of flour
1 tsp
of baking powder
½ tsp
of salt
½ tsp
of baking soda

Beat together
½ cup
of butter
1
egg
1 cup
of sugar
1 cup
of ricotta
1 tsp
of vanilla
½
lemon zest
½
orange zest

Glaze mix
1 cup of confection sugar
1 tbsp of milk
Lemon zest

 

Directions

1 Whisk together first 4 ingredients in a bowl.

 

2 Beat the butter and the rest of the ingredients listed below the butter in a separate bowl.

3 Add the flour mixture (step 1) to the butter mixture (step 2) to form a dough

4 Greased cookie sheets or use patchment paper on the cookie sheet, then add flour mixture drop by tablespoon size onto cookie sheets and bake.

5 Make the glaze and then baste on cooked cookies cakes.
