Oatmeal with kale and Eggs

Ingredients List

2 cups of cooked oatmeal
4 cooked eggs, over easy or hard boiled
1 tablespoon of olive oil
1 cup of kale, chopped
1 cup of spinach, chopped
½ cup of button mushrooms, sliced
1 tablespoon of mirin
1 tablespoon of soy sauce
1 tablespoon of miso, white or chick pea
1 teaspoon of salt
1 scallion, sliced

Directions

1 Prepare oatmeal: In a small saucepan, boil 2 cups water (or milk), pinch of salt, and 1 cup of old-fashioned rolled oats. Reduce heat and simmer for 5 minutes. Remove from heat and cover until thickened (about 2 minutes)

2 Cook Greens: Heat oil in a pan on medium heat. Add kale, spinach, and mushrooms and cook for 3 minutes until soft. Add mirin, soy sauce, miso, and a few tablespoons of water if needed to dissolve miso. Simmer for 10 minutes until kale and spinach is wilted.

3 Cook Eggs: Prepare eggs the way you like them – hard boiled, over easy, pouched, etc.

4 Assemble: Place spinach/kale mixture on top of cooked oatmeal and place eggs on top. Season with salt and pepper and garnish with sliced scallions.
