Ingredients List

10 large eggs (not jumbo)
2 lbs Gold Medal all purpose flour
2 teaspoons vanilla
2 sticks of butter (1/2 lb)
1-1/2 cups of sugar
6 teaspoons of baking powder

Note: If you want lemon icing: mix juice of two lemons with confectioners sugar.

Directions

1 Beat eggs and sugar together on high. We use the whip attachment with our Kitchen Aid mixer . Add vanilla and whip 5-10 minutes until fluffy. While mixing, melt butter in microwave for one minute (make sure it is not hot when you put it in the egg mixture later).

2 Put baking powder directly into the 2 lbs bag of Gold Medal flour. Then, slowly pour the butter (still beating) into the egg/sugar mixture. Next, slowly pour the flour bag (with baking powder) on slow speed into the egg mixture. Use a spatula to help it along and remove any flour from edges.

3 Coat baking pans with grapeseed spray oil or other nonstick oil. Put vegetable oil on the bottom of a cutting board or butcher block. Roll out a one foot by two inches roll of the dough and slice into 1/2 inch sections. Roll each section and twist onto cookie sheet. Bake at 350 degrees about 40 minutes until slightly brown.
