1/2 cup of red wine
1/2 tsp of salt and pepper
1/2 cup of water
2 pounds of pork tenderloin in 1/2″ slices
1 onion, peeled & sliced
3 tablespoon of butter
3 tablespoon of oil
2 tablespoon of flour
1 clove
1/2 tsp of cinnamon
1 small bay leaf
3 parsley sprigs
1/2 cup of chicken stock

1 In a bowl, combine wine, water, onion, cinnamon, bay leaf, clove, parsley, salt, and pepper.

2 Arrange meat in slices in one layer in a shallow dish and pour marinade over, turning to moisten both sides.

3 Marinate 2 hours turning once. Remove steaks from marinade and reserve marinade.

4 Heat butter and oil in large skillet and brown pork on each side. Transfer pork to a baking dish and set aside. In the skillet, add flour to the oil and butter and cook on low heat until flour is lightly browned. Add the chicken stock and the leftover marinade.

5 Stir constantly with a wire whisk and bring to a boil until sauce is smooth and slightly thickened. Add salt & pepper. Pour sauce over pork steaks and bake for 10 minutes.
