2.5 lbs baby lamb chops
1/2 tsp of salt and pepper
1/2 cups of wine vinegar or white balsamic vinegar
1/4 cup of extra virgin olive oil
1/2 cup of fresh mint coarsely chopped
3 cloves of chopped garlic
1 tsp of imported Italian dry oregano
1 tsp of fresh dry red hot pepper or red pepper flakes
1 Marinate the meat with garlic, vinegar, mint, oregano, salt, and pepper overnight.
2 Grill the following day. Place lamb chops on the grill (or cast iron pan) over medium flame 3-4 minutes on each side.
Serve with wedges of lemon.
Note: this is a great recipe with pork chops, baby spareribs or veal chops as well.
