Homemade Hot Pretzels 1280

Ingredients List

4 cups all-purpose flour
2 teaspoons salt
1 teaspoon brown sugar
1 cup warm water
4 teaspoons active yeast (1-2 packets)
3 Tablespoons melted butter
Coarse salt for sprinkling
For Soda Bath: 1/2 cup baking soda and 2 quarts water
For browning: Use egg yolk/water or more melted butter

Directions

1Preheat oven to 400 degrees. In a standing mixer bowl, whisk warm water, brown sugar, and yeast. On low mix in butter and salt. Then, slowly add flour one cup at a time and knead with dough hook attachment. Cover the bowl with plastic wrap and let the dough rest for 40-45 minutes until it doubles in size. 

2Boil water and baking soda in a large stock pot. Once boiling, turn down to simmer. While waiting for water, break off and roll the dough into 20 inch pieces and form the pretzel shape by making a U shape, then twist and lightly pinch in place. Place the pretzel on a parchment lined cookie sheet. Refrigerate now or continue to cook. 

3Using a perforated spoon, lower each pretzel into the water. Wait 15 seconds, then flip for another 15 seconds. Place them back on the parchment lined baking sheet and brush each with egg yolk or melted butter and sprinkle with coarse salt. Bake the pretzels for about 15 to 20 minutes until golden brown.
