For Sweet Acorn Squash. Thanks EW!

2 or 3 acorn squash, stems cut off halved
3 Tablespoons honey
1/2 teaspoon of cinnamon
4 Tablespoons butter
1/4 teaspoon salt and pinch of pepper
1/2 cup chopped walnuts
2 Tablespoons of maple syrup (optional)
2 Tablespoons brown sugar (optional)
1 pinch of nutmeg (optional)


1 Cleave the acorn squash to cut them in half, and clean out the seeds. Place them cavity side up in a roasting pan.

2 Mix the honey, cinnamon, butter, salt, and chopped walnuts together. If you want, add the optional maple syrup and brown sugar to the mixture. Go for it!

3 Fill each acorn squash half evenly with the mixture. Sprinkle each with salt and pepper. Nutmeg is also a nice addition if you want to add a pinch. Bake at 375-400 degrees until the squash is tender. This usually takes about 45 minutes.
