Recipe 1: Lemon & Cashews Healthy Energy Balls

1 cup cashews
1 cup unsweetened shredded coconut
3/4 cup dates, pitted
1 Tablespoon maple syrup
1 lemon, zested and juiced
1 teaspoon vanilla extract
1 pinch salt
1-2 Tablespoons water if needed

Mix all in blender or food processor and roll into balls. Roll with extra layer of coconut if desired.

Recipe 2: Matcha Healthy Energy Balls Recipe

2 Tablespoons cacao nibs
1/2 cup 
almonds
1/4 cup pistachios
1/4 cup unsweetened shredded coconut
1 Tablespoon coconut oil
1 Tablespoon matcha powder

Mix all in blender or food processor and roll into balls. Roll with extra layer of coconut if desired. 

Recipe 3: Sunflower Cashew Energy Balls 

1 cup sunflower seed
1 cup cashew seeds
2 Tablespoons maple syrup
2 Tablespoons ghee
1 teaspoon sea salt
2 Tablespoons coconut oil
1 tsp vanilla extract
1/4 cup cacao nibs
1-2 Tablespoons water if needed

Mix all in blender or food processor and roll into balls. Roll with extra layer of coconut if desired.

Recipe 4: Chocolate Hazelnut Energy Balls

1/4 cup cashews
1/4 cup hazelnuts
1 cup
medjool dates, pitted
1 teaspoon cinnamon
2 Tablespoons raw cacao powder
1 cup almond flour (or almond meal)
2 teaspoons coconut milk
1 teaspoon vanilla extract
1/2 teaspoon sea salt

Mix all in blender or food processor and roll into balls. Roll with extra layer of almond flour if desired.

Recipe 5: Pumpkin Pie Energy Balls

½ cup pumpkin seeds
¼ teaspoon pumpkin pie spice (or see homemade recipe below)
7 dates, pitted
1 tablespoon unsweetened coconut

Homemade pumpkin pie spice: 1 1/2 teaspoons ground cinnamon, 1/2 teaspoon ground ginger, 1/4 teaspoon ground nutmeg, 1/8 teaspoon ground cloves

Mix all in blender or food processor and roll into balls. Roll with extra layer of pumpkin seeds if desired. 

Recipe 6: Red Velvet Energy Balls

½ cup almond flour
¼ cup coconut flour
2 Tablespoons beet root powder or one cooked and cooled beet
7 dates, pitted
2 Tablespoons honey or maple syrup
2 Tablespoon coconut oil
optional: 1/4 unsweetened coconut or chopped almonds for rolling

Mix all in blender or food processor and roll into balls. Roll with extra layer of coconut or chopped almonds if desired.
