Gazpacho Soup

Ingredients List

4 ripe vine tomatoes (remove seeds), cut in quarters
2 cucumbers (remove seeds) peel and cut one into pieces and dice the other
1 small onion
1 green pepper (remove seeds)
3 cups of tomato juice (fresh or canned)
1/3 cup of red wine vinegar
1/4 cup of olive oil (can leave this out and still tastes good)
Two splashes of hot sauce (Tabasco or Sriracha)
1 teaspoon honey
Salt and pepper to taste

Directions

1 Set the one diced cucumber aside. Place all the other ingredients including one sliced cucumber in a high-speed blender. Mix well for about a minute.

2 Add the diced cucumbers to soup and serve chilled. I like to serve in mugs.
