Garlic Tomatoes Confit

Ingredients List

2 pints of cherry tomatoes, halved
1 cup
of olive oil
garlic cloves, minced
1 cup
of basil leaves, chopped
1 tsp
of salt
fresh thyme sprigs


1 Toss the cherry tomatoes, spices, and olive oil in an oven safe casserole dish. Place the dish into a 350ºF oven and bake for 30 minutes.

2 When done, use it over pasta, zucchini noddles, eggs, salmon and more over the next week by storing it in an airtight container.

Credit: Got basic recipe from No Crumbs Left,, but I use less oil and more garlic than her original fabulous recipe. You should definitely check out her recipes. They are amazing. We love these flavorful tomatoes as a topping for fish, eggs, and even chicken. It goes with everything!
