French onion soup

Ingredients List

1/4 cup unsalted butter
4 cups sliced yellow onions
1 teaspoon sugar
1 Tablespoon all-purpose flour
2 1/2 cups water
1/2 teaspoon dry mustard
1/2 cup red or white wine
4 cups beef broth
1 teaspoon of salt & pinch of pepper
2 sprigs fresh thyme
1 French baguette, sliced diagonally
1/2 lb Gruyere or Swiss cheese

Directions

1In a saucepan, melt butter and add onions and sugar and cook until transparent. Stir in flour and add water, wine, beef broth, salt & pepper, and thyme. Boil then reduce heat to simmer. 

2Toast bread slices until lightly browned. Divide soup into four oven safe bowls and place 1 slice toasted bread on top of each bowl. Top with cheese slices and bake at 425 for 10-15 minutes until cheese melts. You can also broil the tops to melt the cheese, which is quicker 3-5 minutes.
