Ingredients List

4 filets of tilapia, cod, or salmon
2 Tablespoons olive oil
2 teaspoons onion powder
2 teaspoons garlic powder
2 teaspoons paprika
2 teaspoons black pepper
2 teaspoons salt
1 teaspoon cumin
1 teaspoon sugar
1 teaspoon dried thyme
1/4 – 1/2 teaspoon cayenne pepper (gets hot fast so taste)

Directions

1 Brush your fish of choice (tilapia, cod, or salmon) with olive oil to coat enough that the blackening powder will stick. 

2 Blackening Powder: In a separate bowl mix together the onion powder, garlic powder, paprika, black pepper, salt, cumin, sugar, dried thyme, and cayenne pepper. 

3 Cover the fish generously with blackening powder. Place blackened fish on a griddle (or grill), and cook for 5 minutes on one side. Flip and cook for another 4 minutes on the other side. 

4 Serve over grilled vegetables or in a tortilla with homemade salsa, lettuce & tomatoes. This is also delicious with avocados or mangos.
