Fish Bisque Soup

Ingredients List

1/4 cup of butter
1/4 cup of onion freshly chopped
1/4 cup of flour
3 cups of milk
1 1/2 teaspoon of salt
1 cup of tomato juice
1/3 lb. flounder
1/3 lb. scallops ( or lobster )
1/3 lb. shrimp
1/4 cup of celery finely chopped
1/4 cup of cooking sherry
2 tablespoon of parsley
Grated parmesan cheese

Directions

1 Sauté onion and celery in butter for 5 minutes on low heat. Add flour and milk slowly while stirring until smooth and slightly thick. (Note: For a thicker mixture add additional flour or corn starch and milk in a separate cup then add this to the mixture gradually. This thickens the soup, but will be thinned when tomato juice is added.)

2 Add salt, tomato juice, parsley, and fish (chop the fish into about 1 inch pieces and the shrimp into half pieces). Add Parmesan cheese.

3 Cook for 10 minutes but do not boil. While cooking add 1/4 cup or more of cooking sherry to taste.
