1 cup of evaporated skim milk
1 Tablespoon of sugar
1 cup of all-purpose flour
Pinch of salt
1/2 teaspoon of vanilla extract (optional)
1 Put the milk, eggs, and sugar in a blender or food processor and mix together before placing the flour in (about 5 seconds). Add the flour and salt and process until creamy.
2 Heat a buttered/greased crepe pan (or frying pan), and pour three tablespoons of the mix into the pan until the crepe is set and lightly browned.
3 Serve with a variety of fillings like apples & cinnamon, blueberries, bananas & Nutella, etc. Be creative!
