1 lb large mushrooms
3 Tablespoons of grated Parmesan cheese
1 clove garlic, chopped
1 small onion, chopped
1 cup breadcrumbs (seasoned)
4 Tablespoons butter, melted
6 Tablespoons olive oil
1 Tablespoon chopped parsley
Salt & Pepper to taste

Stuffed mushrooms are a favorite in the Kelly family, and Grace’s family recipe is simply the best. This is a fun one to try when cooking with kids in your new Ken Kelly kitchen!

Directions

1 Preheat oven to 375 degrees F. Clean mushrooms and remove the stems placing the stems in a blender or food processor.

2 Add the following to the mushroom stems in the blender / food processor: Parmesan cheese, garlic, onion, bread crumbs, butter, parsley, salt and pepper. Process everything together until smooth. Then, fill the mushroom caps generously with the stuffing mixture. 

3 Place 2 tablespoons olive oil in a baking dish and lay the mushrooms in rows stuffed side up. Pour the balance of the oil over all the mushrooms. Bake at 375 for 20 minutes.
