1 1/2 lb of Roma tomatoes, seeded & quartered
1/2 cup of chopped fresh cilantro
1 clove of garlic, minced
1 jalapeño, seeded & chopped
1 red onion, chopped
1 tablespoon of lime juice (or lemon)
1/2 teaspoon of sea salt
Note: For a basic bruschetta dice: 4 plum tomatoes diced, 1 red onion, 1/8 cup olive oil, 2T balsamic vinegar, 2 garlic cloves, 1 tsp salt, 1/4 tsp ground pepper, pinch of parmesan cheese
1 In a blender or chopper, pulse the cilantro, garlic, jalapeño, and red onion. Then add the tomatoes and salt and pulse some more.
2 Strain the mixture in a mesh strainer and transfer everything to a serving bowl.
3 Stir in lime juice and serve.
