1/2 cup butter
10 cups cubed French brioche bread
3/4 cup brown sugar and another 3/4 c for later
1 teaspoon cinnamon (x2)
1 teaspoon vanilla extract (x2)
1/4 teaspoon nutmeg
1 cup heavy cream
1 cup milk
5 ripe bananas, sliced
Confectioner’s Sugar to sprinkle on top
Note: Trader Joe’s French brioche bread is great for this recipe
1 Melt butter in frying pan and add 3/4 cup brown sugar, 1 tsp cinnamon, 1 teaspoon vanilla extract and stir. Add bananas and mix in frying pan to coat.
2 In a separate bowl whisk together eggs, 3/4 cup brown sugar, 1 tsp cinnamon, 1 tsp vanilla, nutmeg, heavy cream, and milk. Add cubes of bread and mix until coated. Pour bread mixture into baking pan and spread banana mixture on top.
3 Bake at 350 degrees for 45-50 minutes and sprinkle top with confectioner sugar before serving.
