1 bunch of Kale, chopped with stems removed
1/2 cup of cashew nuts
2 oranges (or grapefruits), cut into small chunks
3 scallions, chopped
1/2 cup of cilantro, chopped
1 carrot, shredded
1/2 tsp. salt
1/4 tsp. freshly ground black pepper
3 ounces goat cheese (optional)
1/2 cup of olive oil
2 tbsp. balsamic vinegar
2 tbsp. rice vinegar
2 tbsp. soy sauce
1 tbsp. sesame oil
2 tbsp. honey
2 cloves of garlic, minced
1 tbsp. fresh ginger, grated
1 Tablespoon of sunflower seeds (optional)
1 Put all the salad ingredients in one large bowl and mix.
2 For the dressing, place all ingredients in the blender and blend on high speed until creamy.
3 Try it and add a pinch more salt if necessary. Pour some of the dressing over the salad and taste. Add more slowly to desired taste.
4 Toss and serve!
