In a large skillet, heat 1 tablespoon of butter and 1 tablespoon of olive oil on medium-high. Season the sea bass filets with salt and pepper and add fish to pan skin side down. Add 1 clove diced garlic, 1 teaspoon thyme, and lemon peel to the pan and cook for 6-7 minutes basting the sea bas with the oil mixture from the pan until the skin is crisped. Transfer the fish skin side up to a baking dish and add 1/2 cup of port or red wine to pan and roast in oven for 3-4 minutes on 400 degrees until fish is cooked through.
